In the other hand, fresh-keeping chitosan has good antibacterial properties.

Chitosan is extracted from deep-sea Alaskan Snow crab leg.
It is white or off-white amorphous translucent powder or small flake.
Chitosan is insoluble in water or alkali solution,but it is soluble in many kind of organic acid and part inorganic acid
